Wintry Dinner: Homemade Potato Soup

A lazy winter Sunday: movies and cooking.

The Boy slept late – until the dogs licked him awake – and enjoyed watching Elf with me and my grandmother. He also volunteered to make us Grilled Cheese sandwiches for lunch (how sweet!). Even if he did burn them… we ate them with appreciation. I still have a lot to teach my budding young chef :)

The snow finally melted away with today’s sunny sky. Of course, my favorite part of the day is reading the ads from the Sunday newspaper and clipping coupons. I was able to buy a big thing of my All laundry detergent for 99cents! (regular $5.50) Happy dork that I am

Dinner tonight was a wonderful homemade potato soup:

  • 4 cups peeled and cubed potatoes
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cups water
  • 2 tsp salt
  • 1 cup skim milk
  • 1 cup half and half
  • 2 Tbsp parsley, chopped

Simmer vegetables with water and salt, covered for 20 mins, until tender.

Mash vegetables, leaving some chunks. Add rest of ingredients and simmer until thick and deelish!

Serve with cheddar cheese and crumbled bacon (if carnivorous).

A perfect winter dinner!

Not quite ready to be back at work tomorrow. Hopefully it’ll be a fun Monday!
